White Chicken Chili

Had this soup at our friends the Hawkleys and loved it!  I know the Aunts make it too!  I had to make dinner for a family and put chicken in the crockpot with some broth.  Then I pulled it out shredded it and sauted it as below and added everything back in the crockpot for a few hours.  Fresh cut from the cob corn made it HEAVEN!!!!  We also like a dollop of sour cream and shredded cheese and crushed corn chips on top!
 
In a large pot saute:
1lb chicken cubed or shredded
1medium onion
1 1/2 tsp garlic powder
1 tbl vegetable oil

Add:
2 cans great northern beans drained
1 can chicken broth
2- 4 oz cans of green chiles
1 tsp salt
1 tsp cumin
1 tsp oregano
1/2 tsp pepper
1/4 tsp cayenne pepper
1/2 cup corn optional

Bring it all to a boil. Reduce heat and simmer uncovered for 30minutes.
add sour cream and a little milk if it needs to be thinned.
Serve with cheese on top and tortilla chips

Broccoli-Cheese Soup

(Mary Jones)

1 lb. fresh broccoli, or 10oz. frozen
2 c. chicken broth (2 cups water and bouillon cube)
3 c. milk
1/2 c. butter
4 T. flour
1 lb. Velveeta cheese
1/4 t. salt

Cook broccoli in chicken broth until tender. Make a sauce with butter, flour, and milk. Add cheese and stir until melted. Add broccoli and broth. Season. Garnish with crumbled bacon.
