Meat Loaf

I talked to Vaness the other day and she said No No loves meat loaf but she has never made it for him.  I told her it is pretty easy and I would post my quick at home made up recipe. There are endless possibilities of other yummy additions but here is the basic recipe.

MEAT LOAF

1.5 lbs hamburger
1 egg
2 pieces of bread crumbled
1 teaspoon Worcestershire sauce
1 squirt mustart
1 squirt ketchup
1 tsp. brown sugar
1/2 cup finely chopped or grated onion
1/2 tsp of oregano, parsley, salt, pepper, garlic
(lipton onion soup mix might be good too)

Mix ingredients in a large bowl and then place in a bread pan.  Smooth the meat on top so it is not too scary bumpy looking.  Cover the entire top with about a 1/2 inch of ketchup.  It is really good carmelized after baking the whole time on top.  Bake for about an hour at 350 degrees.  You may need to carefully drain a little of the grease out near the end and then bake 15 mins more.

If you choose to make mini meatloafs in muffin tins spray the tins first.  Bake only for about 1/2 the time.
 Pinterest had a piped topping of mashed potatoes on top of the cupcake meatloafs and baked until browned like shepherds pie.  Looked adorable. Maybe a little green pea on top!

White Chicken Chili

Had this soup at our friends the Hawkleys and loved it!  I know the Aunts make it too!  I had to make dinner for a family and put chicken in the crockpot with some broth.  Then I pulled it out shredded it and sauted it as below and added everything back in the crockpot for a few hours.  Fresh cut from the cob corn made it HEAVEN!!!!  We also like a dollop of sour cream and shredded cheese and crushed corn chips on top!
 
In a large pot saute:
1lb chicken cubed or shredded
1medium onion
1 1/2 tsp garlic powder
1 tbl vegetable oil

Add:
2 cans great northern beans drained
1 can chicken broth
2- 4 oz cans of green chiles
1 tsp salt
1 tsp cumin
1 tsp oregano
1/2 tsp pepper
1/4 tsp cayenne pepper
1/2 cup corn optional

Bring it all to a boil. Reduce heat and simmer uncovered for 30minutes.
add sour cream and a little milk if it needs to be thinned.
Serve with cheese on top and tortilla chips

BLT Spaghetti

BLT (Bacon, leek, tomatoe) Spaghetti
Ingredients:

2 leek
2 Tbs. olive-oil
10 slices bacon (cut in half both ways, lengthwise and width)
2 clove minced garlic
1 large can whole or cut tomatoes (i get the garlic basil seasoned ones)
1 box thin spaghetti
grated parmesan cheese

Preparation:

Cook and drain spaghetti while you make the sauce.

Trim tough tops and root from the leeks. Halve them lengthwise and thinly slice. Wash and separate in a strainer. Heat the olive oil in a large skillet. Crisp the bacon. Add the leeks and garlic, cook for a few minutes until soft. Add tomatoes, including puree. Mash the tomatoes. (I add about 1/2 cup of marinara sauce or tomatoe paste to thinken, if I have it.)

Add the BLT sauce to the pasta, toss, and serve topped with parmesan.

Easy Cheesey Enchiladas

-1 can of canned chicken (12.5 oz, we get the Kirkland brand from Costco)
-1/4 c. diced onion (optional)
-1/4 c. diced bell pepper (optional)
-seasonings: salt, pepper, salsa, cumin, cayenne, etc.
-6 flour tortillas (small sized, like for soft tacos)
-butter
-1 can of enchilada sauce (I used Old El Paso brand)
-grated cheddar cheese

Heat oven to 350. Drain water off the canned chicken. In a sauce pan, lightly oil it or spray with pam and then toss in your drained canned chicken. Cook on medium heat until it is warmed through. Season it with what you like.. i used all of the above, but just use what you have on hand. Push the chicken to one half of the skillet, and spray the other half again and toss in the onion and pepper. Cook for a couple of minutes, and then stir together with the chicken. remove from heat. In another skillet, cook your flour tortillas one at a time in about a teaspon of butter for each one.. flip and cook both sides, just until they are soft and heated through. In a small baking dish, spread about 1/3 a cup of the enchilada sauce on the bottom of the pan. Now, roll your enchiladas... lay out a cooked tortilla.. add 1/6 of the chicken mixture, sprinkle with cheddar cheese, and roll up. Lay in the baking dish and continue with the next tortilla. Once all are rolled, pour the remaining enchilada sauce over the enchiladas and sprinkle the top with more cheese. Bake at 350 until cheese is melted and the sauce starts to bubble. Yummy topped with sour cream.

**Side note: I had never cooked with canned chicken until recently.. I just thought it sounded gross. Well Scott bought a case of it at Costco and started making chicken tacos with a can of chicken seasoned with salsa. I couldn't believe how easy and yummy it was! Now we are always stocked up on canned chicken and I can't believe that I didn't find out this secret before! These enchiladas literally take about 15 minutes to prepare and they are so yummy.
