PRETZEL SALAD

Ingredients:


2 cups crushed pretzels

3/4 cup butter, melted

3 tablespoons white sugar



1 (8 ounce) package cream cheese,

softened

1 cup white sugar 1 (8 ounce) container frozen whipped

topping, thawed



2 (3 ounce) packages strawberry or raspberry

flavored gelatin

2 cups boiling water

2 (10 ounce) packages frozen

strawberries or raspberries



Directions:

1. Preheat oven to 400 degrees F (200 degrees C).

2. Stir together crushed pretzels, melted butter and 3 tablespoons sugar; mix well and press mixture into the bottom of a 9x13 inch baking dish.

3. Bake 8 to 10 minutes, until set. Set aside to cool.

4. In a large mixing bowl cream together cream cheese and 1 cup sugar. Fold in whipped topping. Spread mixture onto cooled crust.
Make sure your cream cheese is all the way to the edges of the pan & sealed (to keep the jello from seeping under the cream cheese & making the crust soggy).



5. Dissolve gelatin in boiling water. Stir in still frozen strawberries or raspberries and allow to set briefly. When mixture is about the consistency of egg whites, pour and spread over cream cheese layer. Refrigerate until set.

Caramel Corn

1 cube butter
1 lb brown sugar
1 Cup light karo syrup

Boil and then add 1 can sweetened condensed milk. Continue to boil until it gets to the soft ball stage. (this is where you test a little drop in cold water and see if it sticks together in a soft ball)

Add to a big bowl of popped popcorn. I like it with lots of caramel.

Holly Candy

(Natalie Jones) Elise's FAVORITE treat!

1 stick butter
bag of big marshmallows
1 tsp. vanilla
corn flakes
green food coloring (opt.)
Red hots (opt.)

Melt first 3 ingredients in pan; add green food coloring if wanted to look like holly leaves. Add 5 cups corn flakes. Drop on wax paper. Make clusters. Add 3 red hots in center of candy to look like holly.

Buttermilk Pancake Syrup

(I think this is Sis. Buhler's recipe) It is sooo good! You will never go back to maple syrup again!

1/2 c buttermilk
1 c sugar
1 cube butter/margarine
1 T karo syrup (white)
1/2 tsp. baking soda
1 tsp. vanilla

In 3 qt. pan bring buttermilk, sugar, margarine, Karo syrup, & soda to a boil. Boil 5 min. Remove from heat & add vanilla. Remove from heat. Should be foamy and white on top. Serve.

I usually put the leftovers in a mason jar, and refrigerate it. I am not sure if it has to be refrigerated though.

Orange Julius

(Mary Jones)

6 oz. can frozen orange juice
1 c milk
1/2 c sugar
1 c water
1 egg
1 tsp. vanilla
10-12 ice cubes

Mix well in blender. Serve at once.

People Chow (Puppy Chow)

(I think this is Tylene's recipe but I'm not sure)

1 (6 0z.) pkg. chocolate chips
1/4 c. peanut butter
6 c. Chex cereal
1 c. powdered sugar

Melt chocolate chips & peanut butter together in microwave 10-15 sec and stir. Repeat until melted. Or melt on stove in double boiler. If it gets burnt or hard and not smooth, add some crisco (elise's culinary arts trick). Gently stir in cereal. Coat well. Sprinkle powdered sugar over mixture. Coat well. Refrigerate in big ziploc bag.

My Favorite Fruit Dips!

Strawberry:

1 c sliced fresh or frozen strawberries
1/4 c sour cream
1 Tbs sugar
1/4 tsp vanilla extract
1/2 c whipping cream (or frozen whipped cream to be speedy and cheap)

In blender, combine: strawberries, sour cream, sugar, and vanilla. Blend til smooth.
In separate bowl, beat cream until stiff peaks form. Fold whipping cream or whipped cream into strawberry mixture (low setting on blender). Refrigerate before serving.

Vanilla:

vanilla pudding mix
milk
vanilla extract
frozen whipped cream
cream cheese
brown sugar

Use any combination of ingredients for easy dip. When using pudding, be sure to use milk!
If you don't have pudding, use brown sugar and vanilla, and it will be more of a caramel dip. Let set up some before serving.

Cafe Rio Creamy Cilantro Dressing

f1 (16 oz.) Jar Green Salsa
1 pkg. Dry Ranch Dressing
1/2 C. Sour Cream
1/2 C. Mayonnaise
1 C. Cilantro (chopped)
1 tsp. Minced Garlic
1/4 tsp. Cayenne Pepper
1/2 tsp. Salt
2 Tbsp. Lime Juice
1/2 tsp. Cumin
1/2 C. Sugar

Mix all ingredients together in blender. Blend until smooth. Chill. Serve.

Popcorn Balls

6 qts. popped corn
1 c. sugar
1 small pkg jello
1 c. karo

Cook until mixture begins to boil. Remove from stove. Pour over popped corn. Make into balls.

Texas Caviar

This is so good! Heather made it for Vanessa's Reception.

1 can white beans
1 can black beans
1 can corn
1 can black eyed peas
1-2 cans sliced olives
1-2 tomatoes diced
Avacado (to taste)
green onions (to taste)
Italian dressing mix (package directions)

Mix all ingredients in large bowl. Chill and serve with chips or on mexican food.
(the longer refrigerated the better it is)

MY FAVORITE SALSA

I got this recipe from Breianna Anderson. It is her Grandma Judd's recipe, but you can add and take out different ingredients to make it your own!

2cans of diced tomatoes
2cans of green Chile
Jalapenos to taste
Cilantro to taste
Salt to taste
Garlic salt to taste
Green onions to taste

Put all of the ingredients together in the blender, and let her rip! I hate chunky salsa, so this is my favorite because it makes it exactly how I LOVE it! Try it, it's delicious! Be aware that if you let it sit in the fridge the salsa does get spicier!!!

.German.Chocolate.Frosting.

1- c. sugar
3- slightly beaten egg yolks
1/2- c. butter (or margarine)
1- tsp. vanilla
1- c. half & half (or canned milk)

cook together on stove, stirring constantly with wisk until thickens. then add:

1 1/3- c. coconut
1- c. chopped pecans

cool and spread over chocolate cake.

.BLACK.BEAN.SALSA.DIP.

When it comes to makin' SALSA, I believe all ingredient quantities should be approximates!! So PLEASE alter it to fit YOUR family's preference.

- 2-4 fresh tomatoes (depending on size & preference), diced.
- 3-5 ripe avocadoes, diced.
- 1 (or less) red onion, diced.
- 1 can black beans.
- 1 c. frozen white corn, thawed (or 1 can of corn).
- fresh cilanto (optional! it can be over powering.)
- 1 dry packet Italian dressing (prepare by directions on back, but use only 1/2 of the oil.)

Toss all ingredients together in large bowl and serve with corn chips... Tostitos Scoops are best! FYI: this recipe is absolutely refreshing & ADDICTING! A sure hit.

- 1 tub whipped cream cheese spread (12 oz size)
- 1 jar marshmallow cream

fold together both ingredients and serve with fresh fruit.
