Sheilah's Mint Brownies

Brownie layer:
-4 oz unsweetened chocolate
-1 c. butter
Melt together in the microwave for 30 seconds at a time, until barely melted- once the butter is hot it will help melt the rest of the chocolate by stirring.. do not overcook.) Set aside.
In a mixer, beat until a little fluffly:
-4 eggs
-2 c. sugar
Add:
-1 c. flour
Then add the chocolate/butter mixture (which should now be slightly cooled down by setting aside). Mix together and pour in a greased/floured 9x13 pan. Bake at 350 for 28-30 minutes. Cool.

Mint layer:
-3 c. powdered sugar
-6 T. softened butter
-4-6 T. milk
-1 tsp. mint flavoring
-3-4 drops of green food coloring
Beat ingredients together and frost over brownies, refrigerate until the mint layer is set, about 30 minutes.

Chocolate Frosting Layer:
-1/4 c. softened butter
-1/3 c. cocoa powder
-1/4 tsp. salt
-1/3 c. milk (more or less)
-1 1/2 tsp. vanilla
-3 1/2 c. powdered sugar
Beat ingredients together, and frost over the other brownie layers. Let set before cutting brownies into bars.

Peanut Butter Cookies

I worked forever on this recipe to make it perfect cuz I usually don't like peanut butter cookies. So, if you hate it, don't tell me!

1/2 c sugar
1/2 c brown sugar
1/2 c peanut butter
1/4 c shortening
1/4 c butter
1 egg

Mix in bowl.

1 1/4 c flour
1/2 tsp. baking powder
1/4 tsp. salt

Mix in bowl.

Mix both mixtured together. Roll into balls. Squish with fork in a criss-cross.
Bake at 350 for 9 to 10 min.

If you want an extra yummy treat, dip bottom half of cookie in chocolate and set on wax paper to harden. Eat like that, or use 2 to make the best ice cream sandwich ever!

.pumpkin.chocolate.chip.cookies.

-1 pkg SPICE CAKE mix
-1 can (larger size) 100% pumpkin

mix together. add chocolate chips.

BAKE @ 350 FOR 15-20 MINUTES.

** drizzle with a cream cheese frosting!!

.APPLESAUCE.COOKIES.

1 c. packed brown sugar
1/2 c. shortening
1/2 c. apple sauce
1 egg
cream together. then add:
1 3/4 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg

bake @ 400 degrees for 8-10 minutes. then frost with this YUMMY burnt butter frosting:

in small saucepan cook 1/4 c. butter until it barely, barely changes light caramel-color. remove from head and add 2 c. powdered sugar, 1 tsp. vanilla, 1-2 T. milk.

.chewy.chocolate.cookies.

1 pkg. DEVILS FOOD CAKE MIX
1/3 c. WATER
1/4 c. BUTTER (half a cube, softened)
1 EGG
1/2 bag BUTTERSCOTCH CHIPS

bake @ 350 for 10-12 minutes.

variation: roll dough into balls, then drop each ball in powdered sugar before placing onto cookie sheet to bake.
