Nancy's Brownies

¾ c. melted Butter (1 & ½ sticks)

2 c. sugar

¾ c. cocoa

4 eggs

1 tsp. Vanilla


1 ½ c. flour

1 tsp salt

½ tsp baking soda

6 oz (½ bag) chocolate chips

¼ c. pecans


Combine butter, sugar, cocoa, eggs, and vanilla. Combine dry ingredients in a separate bowl (flour, salt, baking soda). Add dry ingredients to the wet ingredients. Mix until combined and there are no more powdery spots. Add chocolate chips and nuts. Pour batter into a greased 9x13 baking dish. Bake at 350 degrees for 30-35 minutes.

Butterscotch Zuchinni Bread

It is Zuchinni season!  We love to fry them up or boil them and mash them with milk and cheese and salt and pepper.  I also have tested many recipes for bread and this is my new favorite!  The pudding makes it so moist and adds flavor!  I tried sugar free the small box and it worked good too!  I also love the little chewy texture of the oatmeal!  ENJOY!!!

BUTTERSCOTCH ZUCHINNI BREAD

Ingredients:


3 eggs

1 cup oil

2 teaspoons vanilla extract

2 cups sugar

2 cups grated zucchini

2 cups flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon ginger

1/2 teaspoon nutmeg

1/4 teaspoon baking powder

1/2 cup rolled oats

1 package (3.4-ounce size) butterscotch pudding mix

1 cup nuts, raisins or dates



Directions:

Mix bread ingredients. Pour into 2 greased, floured, wax paper lined pans. Bake 1 hour at 350 F degrees.

Sheilah's Mint Brownies

Brownie layer:
-4 oz unsweetened chocolate
-1 c. butter
Melt together in the microwave for 30 seconds at a time, until barely melted- once the butter is hot it will help melt the rest of the chocolate by stirring.. do not overcook.) Set aside.
In a mixer, beat until a little fluffly:
-4 eggs
-2 c. sugar
Add:
-1 c. flour
Then add the chocolate/butter mixture (which should now be slightly cooled down by setting aside). Mix together and pour in a greased/floured 9x13 pan. Bake at 350 for 28-30 minutes. Cool.

Mint layer:
-3 c. powdered sugar
-6 T. softened butter
-4-6 T. milk
-1 tsp. mint flavoring
-3-4 drops of green food coloring
Beat ingredients together and frost over brownies, refrigerate until the mint layer is set, about 30 minutes.

Chocolate Frosting Layer:
-1/4 c. softened butter
-1/3 c. cocoa powder
-1/4 tsp. salt
-1/3 c. milk (more or less)
-1 1/2 tsp. vanilla
-3 1/2 c. powdered sugar
Beat ingredients together, and frost over the other brownie layers. Let set before cutting brownies into bars.
