BLT Spaghetti

BLT (Bacon, leek, tomatoe) Spaghetti
Ingredients:

2 leek
2 Tbs. olive-oil
10 slices bacon (cut in half both ways, lengthwise and width)
2 clove minced garlic
1 large can whole or cut tomatoes (i get the garlic basil seasoned ones)
1 box thin spaghetti
grated parmesan cheese

Preparation:

Cook and drain spaghetti while you make the sauce.

Trim tough tops and root from the leeks. Halve them lengthwise and thinly slice. Wash and separate in a strainer. Heat the olive oil in a large skillet. Crisp the bacon. Add the leeks and garlic, cook for a few minutes until soft. Add tomatoes, including puree. Mash the tomatoes. (I add about 1/2 cup of marinara sauce or tomatoe paste to thinken, if I have it.)

Add the BLT sauce to the pasta, toss, and serve topped with parmesan.
