Creamy Spinach Shells

Don't let the word "spinach" scare you, this is so yummy!
Ingredients:
3 Tbs. Olive oil
2 minced cloves of garlic
1 minced onion
salt & pepper
1 box chopped spinach
1/4 tsp. nutmeg
1 container ricotta cheese
1/2 cup italian blend cheese
2 beaten egg yolks
1 lb. shell pasta
1 can of your favorite pasta sauce (I like ragu sundried tomatoe and basil)

Preparation:

Cook and drain pasta while preparing spinach

Thaw spinach and pat dry with a paper towel. Heat olive oil in a large skillet. Saute oinion and garlic until soften. Add the spinach. Season with salt, pepper, and nutmeg. Add spinach mixture to pasta. Mix in the ricotta and italian cheeses. Turn on low heat and add egg yolks. Heat until egg is cooked in.

Heat up your favorite marinara sauce.

To serve,  add marinara sauce to your plate followed by creamy spinach shells and top with italian blend cheese. Delish!

(Altered, fast, cheap version of Rachael Ray's Baked Shells Casserole. If you want to bake it you put a layer of marinara sauce on your pan then add the shells then put another layer or marinara, top with cheese and back for a few minutes. I don't bake it because I hate washing dishes so I refuse to cook and bake something.)
