Steel Cut Oats

My new favorite breakfast for an early morning is Steel Cut Oats.  I never liked oatmeal that much until this year.  I love it now.  But it must have good cinnamon and vanilla flavor and yummy fruit for on top!
I have been buying Jamba juice oatmeal and figured out how to make it on my own.  I buy the Steel Cut Oats from the bin section of Winco?  It is much cheaper than buying it in the oatmeal section.  But regular oats would be good too.

CROCKPOT STEEL CUT OATS

Fill your crockpot about half full of water then grab a big piece of foil and squish it up for a big glass bowl to sit on.  You want water between your bowl and the crockpot and that is how I do it.  Kind of like double broil style. 
Find a bowl that is big enough for about 3 1/2 cups of water and fits in your crockpot with the lid on.

1 cup steel cut oats
2 1/2 cups water
1 cup milk or half and half
1 tsp cinnamon
2 Tbsp butter
1 tsp. vanilla
1/4 tsp salt
1/8 cup brown sugar

Combine ingredients in bowl and place in crockpot with water 1/2 way up the bowl and cook on low all night 8-9 hrs.  Yummy in the morning.  Add toppings of choice.  I love more brown sugar butter and milk or pie filling blueberries or blackberries, banannas etc.
