PAD THAI

To make it easy buy a Pad Thai box in the Chinese section at the grocery store.  It is a box with the rice noodles and sauce.  It usually costs about $3.50 and feeds only 2 people at my house!
You will also need to buy: green onions, unsalted peanuts, chicken, eggs, bean sprouts
It sounds crazy but it grows on you and is really good.  Order it at a Thai restaurant sometime.

Follow the directions on the box. Soak your noodles in boiled water. Don't soak until the noodle is soft enough to eat, or it will turn into mush in the wok. Just do it until it’s pliable and almost edible, like very al dente pasta, then drain well.
While your noodles are soaking, saute thinly cut chicken in large fry pan or wok.  Push to the side of pan and scramble a few eggs.  Then add your noodles and follow box directions and add sauce and other ingredients.  Yummy!
