Sweet and Sour Chicken

(Mary Jones)

1 lb. boneless chicken, cut in cubes
2 T. oil
1 garlic cloved minced
1 C. green pepper strips
1 C. carrot strips
1 1/4 C. chicken bouillon (broth)
1/4 C. soy sauce
3 T. vinegar
3 T. brown sugar
1/2 tsp. ginger
1 can chunk pineapple in juice (8oz.)
Rice

Brown chicken in oil. Add garlic, green peppers, and carrots. Saute breifly. Add bouillon, soy sauce, vinegar, brown sugar, ginger, and pineapple with juice. Bring to a boil. Serve over rice with sweet and sour sauce.

Sweet and Sour Sauce:
2 T. cornstarch
1/4 C. catsup
2 T. white vinegar
1 1/4 C. pineapple juice
1 T. soy sauce
1/3 C. brown sugar

Heat until thickened. Serve warm.
