Meat Loaf

I talked to Vaness the other day and she said No No loves meat loaf but she has never made it for him.  I told her it is pretty easy and I would post my quick at home made up recipe. There are endless possibilities of other yummy additions but here is the basic recipe.

MEAT LOAF

1.5 lbs hamburger
1 egg
2 pieces of bread crumbled
1 teaspoon Worcestershire sauce
1 squirt mustart
1 squirt ketchup
1 tsp. brown sugar
1/2 cup finely chopped or grated onion
1/2 tsp of oregano, parsley, salt, pepper, garlic
(lipton onion soup mix might be good too)

Mix ingredients in a large bowl and then place in a bread pan.  Smooth the meat on top so it is not too scary bumpy looking.  Cover the entire top with about a 1/2 inch of ketchup.  It is really good carmelized after baking the whole time on top.  Bake for about an hour at 350 degrees.  You may need to carefully drain a little of the grease out near the end and then bake 15 mins more.

If you choose to make mini meatloafs in muffin tins spray the tins first.  Bake only for about 1/2 the time.
 Pinterest had a piped topping of mashed potatoes on top of the cupcake meatloafs and baked until browned like shepherds pie.  Looked adorable. Maybe a little green pea on top!
