Not Your Average Meatloaf

1/2 c. diced yellow onion
1/2 c. bell pepper, any color
2 lbs raw ground hamburger
2 eggs
1 6 oz box of Chicken Stove Top
1 Tbsp water
2 Tbsp chopped cilantro
Salt & Pepper
**Topping

Heat oven to 350. Saute your onion and bell pepper in a small skillet, only for a couple of minutes. Set aside, let cool to room temperature. Meanwhile in a new (large) bowl, stir together the eggs, Stove Top and water and let sit a few minutes. Add the hamburger, cilantro, and onion/bell pepper to the Stove Top mixture. Add salt and pepper to taste. Mix with your hands. Shape into two medium loaves or one large one. (I do two and freeze one for another meal.) You can either mold it into a bread pan, or shape into a rounded loaf and bake in a cake pan, it will hold its shape. Put into the preheated oven and bake for about an hour... then check with your meat thermometer. Overcooked meatloaf is no bueno! It usually only needs a little while longer after that first hour.
**While meatloaf is baking, mix about a half a cup of ketchup with a couple tablespoons of brown sugar, a tablespoon of soy sauce, and a dash of cayenne pepper. When meatloaf is done, spoon this topping over the top, and put back in the oven on broil until it bubbles. Don't burn!
